vegan mint chocolate covered chocolate cake balls
(say that 10 times fast)
So, I was going to bake chocolate chip cookies today. Before I did though I happened to hop on the computer and start reading some of the blogs I follow.
I, of course, immediatly changed my baking plans.
I couldn't find any white chocolate, but I did find some vegan semi sweet chocolates. *squeals with excitement*

Vegan chocolate Cake:
recipe here but I did make some alterations. (below)
1 1/2 cups unbleached all purpose flour (could also use whole wheat)
1 cup white sugar (make sure it is organic or vegan, we don't want our sugars processed with animal bones!)
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1/4 c organic applesauce
1 tsp vanilla extract (check the label, most have high fructose corn syrup)
1 tsp distilled white vinegar
1 cup water
~ Preheat oven to 350. Lightly grease 9x5 inch cake pan.
~ Sift together the flour, sugar, cocoa, baking soda, and salt. Add the apple sauce, vanilla, vinegar and water. Mix until smooth.
~ Pour into prepared pan and bake at 350 for 45 mins.
Vegan Chocolate Frosting
recipe I found on about.com but for the life of me cannot find again. I did make alterations. (below)
3/4 cup unsweetened cocoa powder
3/4 cup non hydrogenated margarine (smart balance light or earth balance)
1 tsp vanilla
1/2 cup maple syrup
smidge of mint extract
~Mix all ingrediants until smooth. Place in fridge for a little while so it firms up some.
Now time for assembly!
Tear, mash, mix, crumble, whatever you want to achieve a mix able cake. Mix the cake and HALF the frosting together. Mix it well!!
Refridgerate for awhile, you want it to be alittle cool to hold together well.
Take out when its ready and make into little balls. Place them on a cookie sheet. I got 51 total. I maybe could have gotten more but I did do some tasting along the way. ;)
Once you have all your little balls made cover them with something and put them in the freezer. Let them get good and frozen. We ran some errands and then I came home to finish them up.
Melt your chocolate however you please. I did the microwave since I don't have one of those nifty double pot things.
Add a hint -o- mint into your melted chocolate and cover those balls!
Place back on cookie sheet and put alittle mashed candy cane on top. (read the labels when buying them to make sure there is not high fructose corn syrup! They put that crap in everything!)
Keep frozen or just in the fridge.
